FETTUCINI ALFREDO 
1 lb. fresh fettucini pasta
1 1/2 c. heavy cream
6 oz. grated fresh Parmesan cheese
1 stick butter (no substitutions)
1 glove garlic, minced
1/2 tsp. salt
1/2 tsp. white pepper

Cook pasta. In heavy, buttered saucepan, melt butter over medium heat. Saute garlic for 1-2 minutes. Pour cream in and increase heat to medium high.

When you can see a haze over the cream and it is good and hot, whisk in grated cheese. Continue gently stirring until all the cheese is melted. Season with salt and pepper. Pour over pasta and toss until all of pasta is coated. Serve immediately.

Serves 6 for a main course, 8 side servings.
