ENCHILADAS 
Tortillas
Ground beef, cooked
Cheese, grated
Onion, chopped

COMBINE:

1 tsp. minced garlic OR
8 garlic cloves, chopped
5 tbsp. flour
2 tsp. chili powder
1 tsp. salt
1/2 tsp. ground cumin
1/2 tsp. mace
1 tbsp. butter
1 tbsp. vinegar
2 (8 oz.) cans tomato sauce
4 c. water

Cook slowly for 3 - 4 hours, stirring frequently. Dip tortillas in sauce and place in pan. Add ground beef, cheese and chopped onions. Roll up and secure with toothpicks, if necessary. Pour additional sauce over top and then sprinkle with cheese. Bake 20 minutes at 325 degrees.
