POTATO COCONUT DROP COOKIES 
1/4 c. of mashed potatoes (cooked, keep hot as cooked)
1 tsp. butter, melted
2 1/4 c. confectioners' sugar
1 1/3 c. flaked coconut
1/2 tsp. vanilla
1/4 tsp. grated lemon rind (or lemon juice)
Dash of salt

Mix hot potatoes, butter and salt in a bowl. Add sugar and beat thoroughly. Stir in coconut and lemon rind (or juice). Drop mixture by teaspoonful onto waxed paper. Let stand at room temperature until firm.

NOTE: Do NOT bake!
