FRUIT COCKTAIL CAKE 
2 c. self-rising flour
1 c. sugar
2 eggs
1 can fruit cocktail mix
1/2 tsp. salt
1/2 tsp. Arm and Hammer Soda
3/4 c. coconut flakes
1 c. light brown sugar
1 c. chopped pecans

Combine first seven ingredients. Mix well. Place in ungreased cake pan. Bake 325 degrees for 50-60 minutes.

TOPPING:

In microwave melt: 1 c. coconut 1/4 c. cream 3/4 c. sugar

Put on high for 2-3 minutes and pour over cooled cake.

Since microwave ovens vary in power, you may need to adjust your cooking time.
