QUICK TAMALE BAKE 
3 tbsp. salad oil
3/4 c. chopped onions
2 tsp. chili powder
1 1/2 c. whole kernel corn
1 pkg. corn muffin mix
2 tsp. salt
1/8 tsp. pepper
1 lb. ground beef
2 1/2 c. canned tomatoes

Heat salad oil in skillet, add onions, seasonings and ground beef. Cook over moderate heat for 8 to 10 minutes. Add corn and tomatoes and bring to a boil. Pour into a 2 quart shallow baking dish. Stir up corn muffin mix according to package directions. Spoon over meat mixture, bake in hot oven 400 degrees for 30 to 40 minutes.
