FAMOUS CHILI | |
1/2 lb. dried kidney beans 2 cans (28 oz. size) whole tomatoes 2 lg. green peppers, chopped 2 med. onions, chopped 2 cloves garlic, crushed 1/2 c. chopped parsley 3 lb. hamburger 2-3 tsp. chili powder Salt 1 tsp. pepper Wash beans. Place in bowl and add water until 2 inches above beans. Soak overnight. Simmer until softened. Drain. Put in crock pot. Add tomatoes, green peppers, onion, garlic and parsley. Saute beef for 15 minutes to remove excess fat. Drain. Add to crock pot. Season with chili powder, salt and pepper. Mix thoroughly. Cover and cook on low for 8-14 hours; high for 4-5 1/2 hours. If cooked on high beans don't need to be soaked or precooked. 1 1/2 pounds ground pork is suggested for 1/2 of hamburger. 12 servings. About 4 quarts. |
