CHILI CHICKEN | |
3 tbsp. flour 4 tsp. chili powder 1 tsp. salt 1/4 tsp. red cayenne pepper 1 lb. chicken breasts 3 tbsp. olive oil 1 med. size zucchini 1 med. yellow squash 1 lg. clove garlic, crushed 1 lg. fresh ripe tomato 2 tbsp. fresh parsley 1 tbsp. lime juice Cut chicken into thin strips. Combine flour, chili powder, salt and red pepper in a bowl. Add cut up chicken and toss until chicken is well coated. In a large fry pan, heat oil. Stir fry chicken and vegetables until chicken is thoroughly cooked and vegetables are tender. Add parsley and lime juice, stirring until well combined. Different vegetables may be substituted or added as desired. |
