GREEN CHILI CHICKEN 
6 chicken breasts (no bones or skin)
1 pt. whipping cream
1 c. freshly chopped parsley
2 cans mild green chilies
1 c. shredded Swiss cheese
Salt & pepper to taste
1 tbsp. olive oil

Lightly brown chicken breasts in olive oil. Place in casserole dish. Cover each breast with one green chili, pour remaining liquid into casserole. Combine whipping cream and parsley, pour over chicken and green chilies. Sprinkle cheese over top. Salt and pepper to taste. Bake at 350 degrees for 45 minutes. Serve with rice.
