CHOW MEIN CASSEROLE 
1 lb. ground beef
1 small onion
1/2 green pepper
3/4 c. celery
2 tbsp. butter
1 can chicken-rice soup
1 can cream of mushroom soup
1 small pkg. frozen mixed vegetables, thawed (or 1 box frozen corn and 1 box frozen peas)
1 1/2 soup cans water
Salt, pepper and soy sauce to taste
1 (8 oz.) pkg. chow mein noodles

Break up and brown ground beef. Chop onion, pepper and celery and saute in butter. Place beef, all vegetables (including thawed vegetables) in roaster or casserole. Add soups and water and spices. Mix well. Bake uncovered at 350 degrees 1 hour. Mixture will be thin. Add noodles last 15 minutes. Rice may be used.
