TEXAS CAVIAR 
2 cans blackeyed peas, drained
2 cans blackeyed peas with jalapenos, drained
1 (4 oz.) can green chilies
2 to 5 jalapeno peppers, chopped
1 sm. onion, chopped
1 clove garlic, chopped
1/2 to 3/4 lb. cheddar cheese, grated
Chips or warm tortillas

Combine first 6 ingredients in a medium saucepan. Simmer on medium heat until hot. Add grated cheddar cheese. Continue cooking until cheese has completely melted. Mash mixture, slightly. Serve with chips or warm tortillas.

MICROWAVE: In a large microwave bowl, combine first 6 ingredients. Microwave on HIGH (100%) for 3 minutes. Add grated cheddar cheese and stir well. Microwave on HIGH (100%) for 2 to 3 minutes or until cheese is completely melted. Mash mixture, slightly. Serve with chips or warm tortillas.

Since microwave ovens vary in power, you may need to adjust your cooking time.
