COUNTY SAUSAGE AU GRATIN 
1 lb. smoked sausage
1 tbsp. vegetable oil
2 1/2 c. hot water
2 c. carrots
4 oz. shredded cheddar cheese
1 c. diced onion
1 pkg. au gratin potatoes
1 tsp. pepper
1 pkg. chopped frozen broccoli

Cut up carrots into strips and simmer until tender (may use canned). Cook broccoli until tender, drain and set aside.

Mix potatoes with water 2 1/2 cup water and pepper, bring to boil, cover and simmer for 10 minutes, stirring occasionally.

Cut sausage into 1/2" slices and cook with onion and oil until onion is tender. Mix everything together and bake 30 minutes at 325 degrees. Serves 5 to 6.
