CHICKEN FAJITAS 
1 1/2-2 lbs. skinless, boneless chicken breast
1 pkg. taco seasoning
4 oz. grated Cheddar cheese
1 chopped tomato
1 pkg. lg. flour tortillas
1 lg. onion
2 tbsp. butter
1 lime
1/2 head lettuce, shredded
Sour cream
Salsa

Mix taco seasoning and lime juice with enough water to cover chicken. Marinate 1-2 hours at room temperature. Then grill until done, then shred. Fry onions until done.

Toppings: 4 ounces Cheddar or Monterey Jack cheese (shredded), shredded lettuce, sour cream, salsa.

To assemble, place tortilla on plate and place in center 2-3 tablespoons chicken, fried onions and cheese, then place in microwave for 30 seconds. Top with lettuce, tomato, salsa and sour cream. Fold in half or like a buritto.

Since microwave ovens vary in power, you may need to adjust your cooking time.
