FRESCO MARINATED CHICKEN FAJITAS 
1/2 c. Wish-Bone Lite Italian Dressing
1/4 c. fresh lime juice
2 med. cloves garlic, crushed
3/4 tsp. cumin
1/2 tsp. grated lime peel
Dash ground red pepper
3 c. cooked chicken strips (about 1 lb.)
2 sm. green or red peppers, cut into strips
1 sm. onion, sliced
1 med. tomato, chopped
1 1/2 tsp. finely chopped coriander (cilantro) or parsley
10 flour tortillas, warmed

In large shallow baking dish, combine lite Italian dressing, lime juice, garlic, cumin, lime peel and pepper. Stir in chicken, green peppers, onion and tomato. Cover and marinate in refrigerator, stirring occasionally, at least 2 hours.

Drain marinade from mixture, then stir in coriander. Serve in tortillas and top, if desired, with sour cream, salsa and shredded Cheddar cheese. Makes about 10 fajitas.
