HOT AND SOUR SCALLOP AND SHRIMP SOUP | |
1 lb. scallops 1 lb. shrimps, diced 6 c. chicken stock 2 cloves garlic 4 lime leaves 2 stalks lemongrass 1 can straw mushrooms 2 jalapenos 2 tbsp. Thai fish sauce 1 tsp. crushed red pepper 1/3 c. chopped mint leaves 6 scallions, finely chopped Salt and pepper to taste In a pot combine chicken stock, garlic, lime leaves, lemongrass, fish sauce and crushed peppers to boil for a few minutes. Then add scallops, shrimps, straw mushrooms, jalapenos and salt and pepper to taste. Let boil and add the fresh mint and scallions. Adjust seasoning again. Serve immediately. |
