TUNA DINNER CASSEROLE 
1 pkg. (6 1/4 oz.) cheddar cheese flavored crackers
2 cans (6 1/2 or 7 oz. each) tuna in vegetable oil, drained
1 c. shredded cheddar cheese
1/4 c. chopped onion
1/4 c. chopped green pepper
2 tbsp. diced pimento
2 1/2 c. milk
4 eggs, lightly beaten
1/2 tsp. dry mustard
1/4 tsp. Tabasco pepper sauce

Line bottom of shallow 2-quart baking dish with single layer of crackers. Put remaining crackers into paper or plastic bag and crush coarsely with rolling pin to make about 1 1/2 cups; reserve. Flake tuna with fork; sprinkle evenly over crackers in baking dish. Sprinkle cheese, onion, green pepper, and pimento evenly over tuna. Combine milk, eggs, dry mustard, and Tabasco; pour over ingredients in baking dish. Sprinkle reserved coarse cracker crumbs over top of casserole. Bake in 325 degree oven for 40 minutes. Let stand 5 minutes before serving. Yield: 4 to 6 servings.
