SPEEDY HAM, MACARONI & CHEESE 
4 oz. uncooked lg. bow tie macaroni
2 tbsp. & 2 tsp. butter
1 tbsp. & 1 tsp. flour
2 tsp. instant minced onion
1/2 c. evaporated skimmed milk
4 oz. cheddar cheese, shredded
2 eggs, well beaten
3 oz. cooked ham, chopped
1 tsp. paprika
1 tsp. parsley, chopped
Parsley sprig to garnish

Cook macaroni until just tender. Drain and reserve. In skillet, heat butter until bubbly; stir in flour and onion, then whisk in milk. Cook, stirring until slightly thickened. Stir in all but 1 tablespoon cheese; heat until cheese is melted. Stir in small amount of hot cheese mixture into eggs, stir egg-cheese mixture into skillet. Stir in reserved macaroni and ham. Cook about 5 minutes or until heated through. Before serving, sprinkle with paprika, parsley and reserved cheese. Garnish with parsley sprig.
