FRUIT COBBLER 
4 c. fruit such as: Black berries, blueberries, sliced Peaches or pears, or a combination
2 c. sugar
1 c. all purpose flour
1 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. mace
1/4 tsp. salt
1 c. milk
1/2 tsp. vanilla
1/2 c. unsalted butter, melted and cooled

In bowl toss together the fruit and 1 cup sugar; let mixture stand 30 minutes. Into bowl, sift together remaining 1 c. sugar, flour, baking powder, cinnamon, mace and salt; add the milk and vanilla; stir mixture just until combined. Pour melted butter into 10 inch square baking pan, 2 inches deep; add the batter, stirring to combine with the butter and spoon fruit over. Bake cobbler in preheated 350 degrees oven for 30 minutes, increase heat to 400 degrees and bake 10 to 15 minutes more, or until golden around edges. Let cobbler cool 20 minutes before serving.
