ARMADILLO EGGS 
2 (6 oz.) pkg. Monterey Jack cheese, shredded
1 1/2 c. Bisquick
1/2 lb. sausage
1 can (26 oz.) whole jalapenos, seeded & deveined
1 box (2 env.) pork flavored Shake & Bake
2 eggs, beaten

Mix 1/2 cheese, Bisquick and sausage. Stuff peppers with remaining cheese. Pinch together tightly. Roll dough 1/8 inch thick. Wrap each jalapeno in dough. Remove excess dough and seal completely. Shape like an egg. Roll eggs in Shake and Bake. Dip in beaten egg and roll in Shake and Bake again. Bake at 325 degrees for 20-25 minutes. Makes about 10 eggs. May be made in advance and reheated.
