GAZPACHO 
1 cucumber, peeled
1 mild red or white onion
3/4 tsp. crumbled oregano
1/3 c. olive oil
1/4 c. wine vinegar
1 can tomato juice (1 qt. = 14 oz.)
Juice of 1 lime
1 avocado

Cut cucumber and onion into small pieces. Slice or chop avocado. Combine all ingredients. Salt to taste. Chill well and serve.
