1 med. eggplant

Peel and cut up the eggplant. Cook in small amount of water - maybe 10 minutes.

1 stick butter, melted
16 Ritz crackers or 1 c.
2 whole eggs, beaten
1 can cream of mushroom soup

Place in buttered casserole dish and bake at 350 degrees for 60 minutes.
