ROGER'S MUFFINS 
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
1 egg
1 c. milk
1/4 c. melted butter

VARIATIONS:

Apple Muffins: Sprinkle tops of unbaked muffins with 1/2 cup finely chopped apple. Combine 1/4 cup sugar and 1/2 teaspoons cinnamon. Shake over apple.

Guava Muffins: Follow above directions using chopped ripe guava.

Bacon: Add 1/2 cup crisp bacon to sifted dry ingredients.

Cranberries: Add 3/4 cup chopped raw cranberries and 1/4 cup sugar to dry ingredients.

Jaboticaba: Add 3/4 cup raw Jaboticaba shells and 1/4 cup sugar.

Raisins and Walnuts: Combine 3/4 cup raisins and 1/2 cup chopped walnuts; add to sifted dry ingredients.

Jelly, Jam, or Marmalade: Fill muffin cups half full. Put 1 teaspoon jelly, jam, or marmalade in each cup. Add remaining batter.

Cheese: Add 3/4 cup grated sharp Cheddar cheese to dry ingredients.

Note: Roger made Jaboticaba muffins using the raw fruit and chopping the hulls in the blender. He says they looked like blueberry muffins and although they had a different flavor, they were delicious. He received this recipe from his sister.

Cook at 170 C for 20 - 30 minutes, until light brown and they pass the skewer test. Great recipe. I have used this for the jaboticaba muffins and they are soft and moist.
