DIETER'S PINEAPPLE CHEESECAKE 
1 envelope Knox gelatin
8 oz. crushed pineapple
2 pkg. vanilla Alba
6 oz. cottage cheese or Ricotta cheese
Vanilla
2 pkg. Equal

Put in order into blender: 1/4 cup boiling water, Knox gelatin, crushed pineapple and juice. Blend, then add Alba, cheese, 1 1/2 teaspoon vanilla, and Equal. Blend in blender until smooth and creamy. (1/4 recipe = 1/2 fruit, 1/2 milk and 1 1/2 protein)
