SWEET POTATO SOUFFLE 
3 c. mashed sweet potatoes
1 c. sugar
1/2 tsp. salt
2 eggs
1/3 stick butter
1/2 c. milk
1 tsp. vanilla extract

Topping:

3/4 c. light brown sugar
1/3 c. flour
1/3 stick melted butter
1 c. chopped nuts

Mix all ingredients (except topping) together and pour into greased baking dish.*

Topping: Mix thoroughly and sprinkle over souffle.

Bake 25 to 35 minutes at 350°F.

*It is best to use mixer to mix ingredients. Do not clean potatoes off beaters and add back to mixture. If potatoes are very "stringy" clean off beaters and mix some more so that souffle will be smooth.
