GOLDEN POUND CAKE | |
1 1/4 c. butter, softened 2 3/4 c. sugar 5 eggs (about 1 c.) 1 tsp. vanilla 3 c. all-purpose flour 1 tsp. baking powder 1/4 tsp. salt 1 c. evaporated milk Heat oven to 350 degrees. Grease and flour tube pan, 10 x 4 inches, or 12-cup bundt pan. Measure butter, sugar, eggs and vanilla into large mixer bowl. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 5 minutes on high speed, scraping bowl occasionally. On low speed, mix in flour, baking powder and salt alternately with milk. Pour batter into pan. Bake until wooden pick inserted in center comes out clean, 70 to 80 minutes. Cool in pan about 20 minutes; remove from pan. Do not use self-rising flour in this recipe. |
