TABOULEH 
1 c. bulgar wheat
1/2 c. each minced parsley and green onion (chopped)
1 lg. tomato, peeled and chopped
Salt, lettuce and tomato wedges
1 c. cold water
1/4 c. each green pepper and fresh mint, chopped (see NOTE)
4 tbsp. each olive oil and fresh lemon juice

Rinse wheat several times, then combine with cold water. Let stand at least 1 hour; drain off any remaining water. Combine wheat with parsley, onion, green pepper, mint, tomato, oil and lemon juice. Toss gently. Add salt to taste. Cover and chill. Serve on chopped lettuce; garnish with tomato wedges. NOTE: Use 2 tablespoons dried mint if fresh mint is not available.
