PUMPKIN COOKIES 
2 c. pumpkin
2 c. sugar
1 c. oil
2 eggs
4 c. flour
4 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
2 tsp. baking soda in 2 tsp. milk
2 c. chocolate chips (optional)
1 c. chopped nuts
2 tsp. vanilla

Mix pumpkin, sugar, oil and eggs. Set aside. Mix dry ingredients, then add to pumpkin mixture. Add soda and milk. Mix well. Stir in chips, nuts and vanilla. Bake at 375 degrees for 10 to 12 minutes. Frost when cool.

CREAM CHEESE FROSTING:

8 oz. cream cheese, softened
1 tbsp. butter
1 tsp. vanilla
3 c. powdered sugar

Cream cheese, butter and vanilla with mixer. Gradually add sugar (and a little milk, if needed).
