RICE LASAGNA 
1 1/2 c. long grain rice
1 lb. ground beef
1 med. onion, chopped
1/4 c. green pepper, chopped
1 (32 oz.) jar spaghetti sauce
1 (16 oz.) container low-fat cottage cheese
1 (8 oz.) pkg. Mozzarella cheese, shredded
1/4 c. Parmesan cheese

Cook rice following directions on package; salt optional. Reserve. Use 13x9x2 inch baking dish and spray with non-stick vegetable oil. Brown ground beef in a large skillet over medium heat. After cooking carefully, pour off excess fat.

Add onion and green pepper, stirring and cooking for two minutes. Add your spaghetti sauce. Beat egg in a medium-size bowl. Stir in cottage cheese and Mozzarella cheese. Spread half the meat sauce over bottom of prepared baking dish. Spoon half the rice evenly over sauce. Top with half the cheese mixture.

Repeat layers. Sprinkle top. Sprinkle top with Parmesan cheese. Bake in preheated moderate oven (350 degrees) for 50 minutes. Let stand 10 minutes before serving.
