EGGPLANT PARMESAN 
2 med. eggplants
2 eggs
Italian seasoning
Garlic salt
1/4 c. milk
Italian bread crumbs
8 oz. egg noodles, cooked & drained
Olive oil
12 oz. cottage cheese
1 lg. jar spaghetti sauce
8 oz. sliced mozzarella
1 c. Parmesan cheese

Peel eggplant and slice into 1/4 inch pieces. Mix eggs, Italian seasoning, garlic salt and milk. Dip eggplant into mixture and then into bread crumbs. Fry in olive oil until brown on each side. Drain.

Lightly grease large casserole. Layer 1/3 cooked noodles, 1/3 eggplant, 1/3 cottage cheese, 1/4 sauce, 1/4 Parmesan cheese and 1/4 mozzarella. Repeat twice. Top with noodles, sauce and slice of mozzarella. Cover and bake at 350 degrees for 20 minutes. Uncover; cook 15 minutes.
