SPINACH CASSEROLE 
2 (10 oz.) pkg. frozen chopped spinach
2 c. cottage cheese (I use low fat)
1 tsp. salt
1/2 to 1 c. grated Parmesan cheese
3 eggs (I use egg substitute)

Cook spinach and drain thoroughly. Combine spinach with cottage cheese, salt, Parmesan cheese and eggs. Blend thoroughly. Pour into a greased shallow casserole or 7x11 inch baking pan. Bake at 350 degrees for 30-40 minutes.

Preparation: 15-20 minutes, easy; cooking: 30-40 minutes, can do ahead. Can use chopped broccoli instead of spinach. Serves 6.
