RICE PUDDING 
1 c. rice
3 c. water
1 tsp. salt
1 qt. milk
2 eggs
1 c. granulated sugar
1 rounded tbsp. cornstarch
About 1 tbsp. vanilla

Boil rice, water, and salt until dry, stirring occasionally. Add milk and heat until just BELOW boiling.

In meantime, beat eggs, sugar, and cornstarch. Stir into hot mixture; stir occasionally until thick. Add plenty of vanilla; pour into serving bowl or dessert dishes; top with cinnamon and serve.
