CHOCOLATE CHESS PIE 
1/2 c. butter
3 oz. unsweetened chocolate
1 tbsp. flour
3 eggs, beaten
1 7/8 c. sugar
1 1/2 tsp. vanilla
6 oz. evaporated milk
1 pastry shell, baked

Preheat oven to 375 degrees. Melt butter and chocolate in a saucepan. Add remaining ingredients to chocolate and cook for 5 minutes. Pour into pastry shell and bake for 25 minutes. Garnish with whipped cream or meringue, if desired.

Note: Fills 1 extra large or 2 (8 inch) pastry shells.
