TOFU MINESTRONE SOUP 
2 qt. chicken or vegetable broth
2 tbsp. soy sauce
1 tsp. ground cumin
1/2 tsp. oregano leaves
1 (16 oz.) can tomatoes with juice
1 green bell pepper, chopped
1 lg. peeled potato, chopped
1/2 to 3/4 c. celery, chopped
3/4 c. any kind of macaroni OR 1/2 c. uncooked rice
1/2 to 1 c. green onion, chopped
1 cake tofu, drained & cubed
3/4 c. grated Parmesan

Bring broth to a boil in a large kettle and add soy sauce, cumin, oregano, tomatoes, green pepper, potato, celery and macaroni (or rice). Cover and simmer 30 minutes. Stir in green onion, tofu and cheese.

Cover and simmer an additional 15 minutes or until flavors are blended and macaroni or rice are done. Serve with additional cheese if desired.
