BACON AND CHEESE MUFFINS | |
1 3/4 c. all purpose flour 2 1/2 tsp. baking powder 1/2 tsp. salt 2 tsp. sugar 10 slices bacon, cooked and crumbled 1/2 c. shredded cheddar cheese 1/2 tsp. chopped parsley 1 egg, beaten 3/4 c. milk 1/3 c. vegetable oil Combine first 7 ingredients in a large bowl; make well in center of mixture. Combine egg, milk and oil; add to dry ingredients, stirring just until moistened. Spoon into greased muffin pans, filling two thirds full. Bake at 400 degrees for 20 to 25 minutes. Remove from pans immediately. Makes 12. |
