BACON - AND - CHEESE MUFFINS 
1 3/4 c. all-purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
10 slices bacon, cooked & crumbled
1/2 c. (2 oz.) shredded cheddar cheese
1/2 tsp. chopped fresh parsley
1 egg, beaten
3/4 c. milk
1/3 c. vegetable oil

Combine first 7 ingredients in a large bowl; make a well in center of mixture. Combine egg, milk and oil; add to dry ingredients, stirring just until moistened. Spoon into greased muffin pans, filling two-thirds full. Bake at 400 degrees for 20 to 25 minutes. Remove from pans immediately. Yield: 1 dozen.
