Chop a pound of raw, lean meat very fine, removing all of the fibers, mix thoroughly with a well beaten egg and the crumbs of a large slice of bread, season to taste. Form into small balls, flatten them and saute in butter. Serve with gravy made by adding a tablespoonful of flour to the browned butter and water to make it the proper consistency.
To prepare these steaks for an invalid, take a round steak and scrape all of the meat from the fibre with a sharp knife, form the pulp into tiny pats and fry quickly; season after they are fried.
