HEARTY BEEF-VEGETABLE SOUP 
1 tbsp. olive or vegetable oil
1 lb. lean ground beef
1/2 tsp. minced garlic
1/4 tsp. salt
1/4 tsp. pepper
1 (16 oz.) bag frozen mixed broccoli, green beans, pearl onions & red peppers
1 (16 oz.) can white kidney beans or great northern beans
1 (16 oz.) can tomatoes, chopped
2 c. water
2 tsp. instant bouillon granules

Heat oil in skillet or heavy saucepan, add the meat; add garlic, salt and pepper. Cook until meat loses its pink color, stirring occasionally. Drain. Meanwhile, combine in large pan the remaining ingredients, add the meat, bring to a boil uncovered. Reduce heat, cover and simmer until vegetables are tender.
