FRESH APPLE CAKE 
3 eggs, well beaten
2 c. sugar
1 1/2 c. Wesson oil
3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 1/2 tsp. vanilla
1 c. pecans, chopped
3/4 c. coconut
2 c. apples, unpeeled and chopped

Beat sugar and eggs; add oil and mix well. Add sifted flour, salt, soda and cinnamon. Add vanilla, nuts, coconut and apples. This will be thick; so stir by hand at this point. Pour into a greased and floured bundt pan and bake at 350°F for 1 hour. Cool cake for 20 minutes and turn out. Pour Brown Sugar Icing over cake.

Brown Sugar Icing:

1/2 stick butter
1/2 c. brown sugar
1/8 c. canned milk
1 tsp. vanilla

Bring first 3 ingredients to a rolling boil; boil 1 minute. Set off heat to cool and add vanilla. Pour over cake while it is still hot.
