HUNGARIAN CREAMED SPINACH 
2 (10 oz.) pkgs. frozen chopped spinach
1/4 c. butter
1/4 c. flour
1/2 tsp. salt
1/4 tsp. garlic salt
1/4 tsp. pepper
1 1/2 c. cream
2 eggs, lightly beaten

Cook spinach following package directions. Meanwhile, heat butter in a saucepan. Blend in the flour and seasonings. Heat until bubbly. Gradually add the cream, stirring until smooth. Bring to boiling; continue to stir and cook 1 to 2 minutes. Remove from heat. Vigorously stir a small amount of sauce into the beaten eggs. Immediately blend into hot sauce, stirring until smooth. Drain spinach thoroughly, and mix into the hot sauce.

Makes about 6 servings.
