CHOCOLATE MACAROON MUFFINS | |
2 c. all purpose flour 1/2 c. sugar 3 tbsp. cocoa 1 tbsp. baking powder 1/4 tsp. salt 1 egg, beaten 1 c. milk 1/3 c. oil MACAROON FILLING: 1 c. flaked coconut 1/4 c. sweetened condensed milk 1/4 tsp. almond extract Combine all ingredients for macaroon filling. Mix well. Combine first 5 ingredients in a large bowl; make a well in center of mixture. Combine egg, milk and oil; add to dry ingredients stirring just until moistened. Spoon into greased muffin pans filling 1/3 full. Spoon 2 teaspoon Macaroon filling in center of each muffin cup; spoon remaining batter over top, filling each muffin cup 2/3 full. Bake at 400 degrees for 20 minutes. 1 dozen. |
