CHOCOLATE MACAROON MUFFINS 
2 c. all-purpose flour
1/2 c. sugar
3 tbsp. cocoa
1 tbsp. baking powder
1/4 tsp. salt
1 egg, beaten
1 c. milk
1/3 c. vegetable oil

Combine first 5 ingredients in a large bowl; make a well in center of mixture. Combine egg, milk and oil; add to dry ingredients, stirring just until moistened. Spoon batter into greased muffin pans, filling 1/3 full. Spoon 2 teaspoons macaroon filling in center of each muffin cup; spoon remaining batter over top, filling each muffin cup 2/3 full. Bake at 400 degrees for 20 minutes. Serve warm. Yield: 1 dozen.

MACAROON FILLING:

1 c. flaked coconut
1/4 c. sweetened condensed milk
1/4 tsp. almond extract

Combine all ingredients, mixing well. Yield: 1/2 cup.
