HARVEST SOUP 
2 tbsp. vegetable oil
1 lb. ground meat
1 c. chopped onion
1 c. diced potatoes
1 c. sliced celery
1/2 c. diced carrots
1 c. shredded cabbage
2 c. tomatoes
6 c. water
1/4 tsp. thyme
1 bay leaf
Salt & pepper to taste
1/2 c. raw rice

In large kettle, put shortening, meat and onion. Cook over medium heat until light brown, stirring with fork to break up meat. Add vegetables, water, rice and seasonings; mix well, bring to boil, reduce heat and simmer until done, about 1 hour.
