SWISS CHEESE BROCCOLI SOUP 
1 meaty ham bone
2 c. water or 1 c. water & 1 c. chicken broth
1 bunch broccoli
2 c. milk or 2 c. half & half
1 c. grated Swiss cheese
2 tbsp. flour
1/4 c. water
Black & white pepper to taste

Simmer ham bone for 1 1/2 hours in 2 cups water, or 1 cup water and 1 cup chicken broth, until meat falls off bone. Wash broccoli and cut into small pieces; put in with the ham broth and cook just until tender. Add milk or cream and cheese. Mix flour in 1/4 cup water until smooth; add to soup and stir until thick. Yield: 6 servings.

This is a good recipe to use a ham bone up especially because I don't like beans. I had a large ham bone with a lot of meat on it so I ended up using about 1 1/2 the recipe. I just dumped the cheese in and it clumped up a lot so I would recommend to sprinkle in slowly. Great soup!!
