MOTHER'S YEAST ROLLS 
2/3 c. shortening
2 tbsp. sugar
1 tsp. salt
1 c. mashed potatoes (unseasoned)
1 c. scalded milk
2 pkg. dry yeast
1/2 c. warm water
2 eggs, well beaten
4-5 c. plain flour

Mix first 4 ingredients and pour the scalded milk over it all and mix. When cool, add the rest of the ingredients and mix. Knead. Put back in greased bowl; cover. Place in warm place to rise. Punch down. Put back in refrigerator. When ready to serve, roll out rolls and cut with a biscuit cutter. Place in a warm place to rise and bake in a hot oven for 10-15 minutes.

Yield: 24-36 average size rolls.
