BERNIE'S MOTHER'S POLISH COOKIES | |
1 lb. lard 6 c. unbleached flour 3 eggs 1 tsp. salt 1 c. whole milk 1 sm. block yeast Granulated sugar Powdered sugar Mix (knead by hand) lard and flour until thoroughly mixed. Add mixture of eggs, salt, milk and yeast (mix yeast with small amount of warm water until liquifies). Knead by hand until thoroughly mixed. You will know batter is mixed when it no longer "sticks to your hands". Shape batter into a ball and place on counter. Allow batter to rise for at least 2 hours. Cut into 6 equal sections. Spread counter with granulated sugar. Roll out dough, one section at a time, on sugared counter and use pizza cutter to cut 2 inch squares. Fill squares with small amount of filling (see NOTE). Fold one side over the opposite side and squeeze both ends. Bake in oven on greased cookie sheet at 400 degrees for 6 minutes or until slightly brown. Cool and sprinkle with powdered sugar. Makes approximately 150 cookies. NOTE: Almost any filling can be used provided it is not too thin. Most pie fillings are acceptable. Also very tasty is a prune mix called lecvar. A good nut mix can be made by using fine chopped walnuts, pecans, or almonds (no salt) and adding applesauce and sugar to desired consistency and taste. |
