CORNELIA'S MOTHER-IN-LAW'S
GNOCCHI
 
3 med. potatoes
2 egg yolks
1/2 tsp. salt
1 c. flour

Boil potatoes in skin until very soft. Peel. Mash or force through a sieve. Add egg yolks and salt. Whip until fluffy. Add flour and mix. Knead until smooth, adding more flour as needed to prevent sticking.

Divide dough into 6 parts and shape each into a long roll, about 1/2 inch in diameter. Cut into 1 inch long pieces. Press with a fork or roll each piece over a cheese grater or slotted spoon to make grooves. Sprinkle with flour.

Add 1/3 gnocchi to 6 quarts boiling salted water. Cook 5 minutes. Remove with slotted spoon. Serve with butter or tomato sauce and/or grated Parmesan.

I used your gnocci recipe to make my polish grandmothers traditional favorite for the holidays. We put our gnocci with fried grated cabbage and butter, almost like a haluski. Your gnocci were delicious this way.
