PIZZA SAUCE | |
Oil Onion Green pepper 12 ripe tomatoes Garlic Salt Pepper Oregano Parmesan cheese Mozzarella cheese Sugar Parsley Saute 1 small chopped onion and a very small amount of chopped green pepper with oil. Peel tomatoes and add to sauteed mixture. Cook down. Add seasonings to taste. After cooking on low heat for several hours add sugar and cheeses to taste (sauce should have a slightly sweet taste). Continue to cook slowly until thickened (this should take about 1-2 more hours). Be sure to stir occasionally to prevent sticking. As ingredients have cooked in, check taste for need of additional amounts before sauce is finished. This amount of sauce takes approximately 7 hours to prepare and makes enough for about 2-3 (12 inch) pizzas. I usually make this when I have time and freeze it for later use. It can be kept this way for up to at least a year or more. |
