PICKLED BEETS 
1/2 gal. beets (more or less)
2 c. sugar
2 c. vinegar
1 tbsp. pickling spices (tied in bag)

Cook beets until tender. Dip in cold water and remove skins. Boil sugar, vinegar, spices together until sugar is dissolved. Add the beets. Simmer 15 minutes. Pack in jars; seal.
