PUMPKIN SPICE CAKE | |
2 c. flour (if desired, you may use a combination of whole wheat and white) 2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 1 c. sugar 2 c. pumpkin pie filling 4 eggs 1 c. oil 1/2 c. chopped walnuts 1/2 c. raisins Mix together the dry ingredients. Add eggs, pumpkin and oil. Blend in nuts. Grease and flour two 9 inch cake pans. Bake for 30 minutes at 350 degrees. (Note: This cake has less sugar than standard version, but is still very good.) FROSTING: 8 oz. light cream cheese 1/2 c. butter 2 c. powdered sugar 1 to 2 tbsp. milk 1/2 tsp. vanilla Mix frosting ingredients in mixer. Frost when cake is cool. (This frosting recipe is a lighter version - contains less fat and less sugar than standard recipes.) |
