SAUSAGE CAKE 
1 lb. mild country sausage, room temperature
2 c. (packed) brown sugar
3 lg. eggs
3 c. all-purpose flour, sifted
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
2 1/2 tsp. pumpkin pie spice
1 c. orange juice
1 tsp. grated orange rind
1 c. sweetened applesauce
1 c. raisins (soak in hot water 10 minutes, drain)
1 c. chopped nuts

Preheat oven to 300 degrees. Cream sausage with sugar. Add eggs, one at a time, beating well after each egg. Sift dry ingredients together, add alternately with orange juice and rind. Add applesauce (if applesauce is tart, add 1 heaping tablespoon sugar to it). Fold in raisins and nuts last.

Pour in greased and floured tube pan and bake at 300 degrees in preheated oven for 1 1/2 hours. Let stand for 15 minutes before removing from pan. Keep refrigerated.

... or this can be served with cake. 1 (5 oz.) jar marshmallow creme 1/4 c. orange juice

Blend together. Makes a good topping for fruit cake or mixed fruit. Delicious over strawberries or fruit pies.
