PASTA SALAD 
2 1/2 c. rotini or other sm. pasta shapes
4 c. very hot water
1/4 tsp. salt
1 tsp. vegetable oil
4 c. broccoli flowerets
3/4 c. carrots, sliced thin
1 tomato, sectioned or
12 cherry tomatoes, halved
2 tbsp. parsley, chopped
1/2 c. olives, sliced or halved
8 oz. of your favorite salad dressing

Combine rotini, water, salt and oil in large microwave-safe mixing bowl. Microwave uncovered on HIGH power (100%) for 16 to 20 minutes or until tender. Test every 2 minutes after 12 minutes of microwaving. Drain, rinse in cold water and set aside. Combine broccoli and carrots in mixing bowl used for step #1. Cover with plastic wrap. Microwave on HIGH power (100%) for 4 minutes or until crispy-tender. Cool slightly. Add rotini, tomatoes, parsley, olives and salad dressing to bowl. Mix well. Cover and chill. Serves 4.

For variety add bacon bits, pepperoni, cheese strips, ham, and/or hard-boiled eggs before serving. Mushrooms, cauliflower, green beans, onions, peas, or pea pods, could also be used in this recipe.

Since microwave ovens vary in power, you may need to adjust your cooking time.
