PASTA SALAD | |
2 1/2 c. rotini or other sm. pasta shapes 4 c. very hot water 1/4 tsp. salt 1 tsp. vegetable oil 4 c. broccoli flowerets 3/4 c. carrots, sliced thin 1 tomato, sectioned or 12 cherry tomatoes, halved 2 tbsp. parsley, chopped 1/2 c. olives, sliced or halved 8 oz. of your favorite salad dressing Combine rotini, water, salt and oil in large microwave-safe mixing bowl. Microwave uncovered on HIGH power (100%) for 16 to 20 minutes or until tender. Test every 2 minutes after 12 minutes of microwaving. Drain, rinse in cold water and set aside. Combine broccoli and carrots in mixing bowl used for step #1. Cover with plastic wrap. Microwave on HIGH power (100%) for 4 minutes or until crispy-tender. Cool slightly. Add rotini, tomatoes, parsley, olives and salad dressing to bowl. Mix well. Cover and chill. Serves 4. For variety add bacon bits, pepperoni, cheese strips, ham, and/or hard-boiled eggs before serving. Mushrooms, cauliflower, green beans, onions, peas, or pea pods, could also be used in this recipe. |
